Launch Hospitality acquired the Walnut Kitchen in 2025. Maryville is home to the DiBartolomeo Family, the founders of Launch Hospitality. Though Launch Hospitality had historically developed their brands and restaurants from the ground up, The Walnut Kitchen provided an opportunity both close to home and close to heart. Since aquiring The Walnut Kitchen, Launch Hospitality has made significant investments in space, people and operational excellence. The Walnut Kitchen closely reflects the values and experiences that we seek out in our own lives and serves as our most authentic of artisanal, craft restaurants.

Forget everything that you know of seafood restaurants and picture hosting a week long seafood party, complete with inventive, properly composed dishes, sushi artists, live music and craft cocktails. It's impossible to reduce this experience to words, most likely because our goal was to fill a niche that hadn't even existed yet. White tablecloth worthy seafood & sushi, hold the tired and unimaginative steakhouse vibe, insert hip hop with a side of graffiti art. That doesn't even come close to encompassing our Pinchy's brand, but it will do. Pinchy's now operates in the Sevierville Tennessee & Boerne Texas markets with our newest location in the works in Maryville Tennessee!
Situated in the cozy downtown of Carthage, Tennessee the Hotel Walton and Restaurant Hull pay homage to regional traditions and a way of life long gone. First opened in 1904, The Hotel Walton has been a place of respite for travelers for over 120 years. Launch's reimagination of this Carthage tradition includes cozy, luxuriously appointed rooms and common spaces, while Restaurant Hull serves guests appalachian fare and craft cocktails supported by our connection t0 Caney Fork Farm and our on site stone mill bakery.

Developed originally as a Pinchy's only spirit, crusher claw is now available at all of our restaurants. Available in cinnamon and sea salt caramel and now making its way into the Tennessee market.
